The Easy All Favorite Cheesecake
1 pound cream cheese 4 tablespoons flour 1 tablespoon cornstarch 2 1/2 tablespoons sugar 1 egg 1/2 teaspoon salt 1/2 tablespoon butter 1/4 teaspoon vanilla
1/4 teaspoon almond extract
Mix together all ingredients and beat for 2 minutes.
Add slowly while beating: 6 tablespoons sour cream 1 cup milk Add, beating thoroughly
2 1/2 tablespoons sugar
Fold into the cheese mix and pour into an angel food tin or spring mold that has been greased with butter and dusted with graham cracker or vanilla wafer crumbs.
Bake at 260 degrees until done, about 2 hours.
When cool, invert on a serving tray and spread with whipped sour cream. Can be served plain or as a nice variation with a faint sprinkling of cinnamon or walnut meat dust.
Tip: This can be frozen.
Fudge Brownie Fingers
2 eggs 1 cup sugar
1/2 cup melted butter
2 squares bitter chocolate, melted
1/2 teaspoon salt
3/4 cup sifted all-purpose flour
1 cup finely chopped nuts (walnuts or pecans)
1 teaspoon vanilla
Beat eggs slightly; add sugar and stir. Add melted butter and chocolate. Mix flour, salt and nutmeats and add to egg mixture. Add vanilla and stir until well blended, but do not beat.
Pour into a well-buttered 9-inch pan. Bake at 325 degrees for 30 to 35 minutes. Cool and cut in 2-inch fingers. Roll in powdered sugar.
Hint: When making your favorite brownie recipe, coconut substituted for the nuts is a nice change.
Date Squares
Cook in saucepan until thick:
2 cups dates, cut fine (to cut dates, dip scissors in warm water)
1/2 cup brown sugar
1 cup water
1 tablespoon flour
Combine:
1 teaspoon vanilla
1 cup flour
1 teaspoon soda
2 cups Wheaties cereal
1 cup brown sugar
3/4 cup melted butter
Spread half the flour mixture in a buttered square pan. Cover with date mixture. Spread the other half of the flour mixture on top. Bake at 350 degrees for 20 minutes. Cool and cut into squares. Makes 2 dozen.
