Spring Ho County Fair results, top recipes

The 2008 Spring Ho County Fair was held at First Texas Bank's community room.

Taking best of show in the adult division of the county fair was Barbara Carlson McClure with her quilt.

Reserve best of show honors went to Carolyn Hamilton with a quilt.

Best of show in the intermediate division (13-18) went to Montana Caler for her artwork. Intermediate reserve best of show was garnered by Kati Hlavaty with a photography entry.

In the junior division (9-12) Crosby Liverman took best of show and reserve best of show honors with beads and a reversible totebag, respectively.

In the pee wee youth division (ages 8 and under), best of show went to Kyndal Moyer for beads, and reserve best of show went to Maci Procter for a paper mache' pig.

High-point adult was Loretta Fisher. High-point in the intermediate division went to Kati Hlavaty. In the junior category, Crosby Liverman took the highpoint award, while Maci Procter earned it for the pee wee division.

Following are recipes for several winning entries in the Spring Ho County Fair baked goods division.

Pecan Pie Muffins
1 cup light brown sugar, firmly
packed
1/2 cup flour
1/2 cup chopped pecans
2 eggs beaten
2/3 cup butter, softened

Preheat oven to 350 degrees. Line muffin cups with paper muffin liners. In bowl, stir together brown sugar, flour and pecans. In separate bowl, beat eggs and butter together until smooth. Stir into dry ingredients until just combined. Spoon batter into muffin cups, about 2/3 full. Bake for 20 to 25 minutes. Cool on wire racks when done.

Chocolate Pecan Crunch
1 egg white
1 tablespoon water
1 pound pecan halves
1 cup white sugar
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups chocolate chips

Preheat oven to 250 degrees. Grease a baking sheet

In a mixing bowl, whip together egg white and water until frothy. In a separate bowl, mix together sugar, salt and cinnamon. Add pecans to egg whites; stir to coat nuts evenly. Remove nuts and toss them in the sugar mixture until coated. Spread nuts out on the prepared baking sheet.

Bake at 250 degrees for one hour, stirring every 15 minutes.

Microwave chocolate chips for 2 1/2 minutes, or until they become liquid. Dip pecans into the chocolate, then set them aside on wax paper to harden.

1/4 cup dry-roasted peanuts,
finely chopped
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/2 cup creamy peanut butter
1/2 cup powdered sugar
1 package (16.5 ounces)
Pillsbury Create 'n Bake refrigerated peanut butter cookies, well chilled

Preheat oven to 375 degrees. In small bowl, mix chopped peanuts, sugar and cinnamon; set aside. In another small bowl, stir peanut butter and powdered sugar until completely blended. Shape mixture into 24 (1-inch) balls.

Cut roll of cookie dough into 12 slices. Cut each slice in half crosswise to make 24 pieces. Flatten slightly. Shape 1 cookie dough piece around 1 peanut butter ball, covering completely. Repeat with remaining dough and balls.

Roll each covered ball in peanut mixture; gently pat mixture completely onto balls. On ungreased large cookie sheets, balls 2 inches apart. Spray bottom of drinking glass with non-stick cooking spray; Press into remaining peanut mixture. Flatten each ball to 1/4-inch thickness with bottom of glass. Sprinkle any remaining peanut mixture evenly on top of cookies; gently press into dough.

Bake 7 to 12 minutes or until edges are golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Store tightly covered.

Chocolate Berry Brownies
1/2 cup butter plus 3 tablespoons
2 ounces unsweetened chocolate
1 cup sugar
2 eggs
2 teaspoons vanilla
1/2 teaspoon almond extract
1 cup flour
1/2 cup seedless raspberry jam
1 1/2 cups powdered sugar
3 tablespoons unsweetened cocoa

In sauce pan, melt 1/2 cup butter and chocolate over low heat, stirring frequently. Remove from heat. Add sugar, eggs, 1 teaspoon vanilla and almond extract. Stir, then add flour just until combined.

Spread brownie batter in greased 8x8x2 pan. Add dollops of jam then swirl with a knife, bake until set, about 35 minutes.

Meanwhile, make icing by melting the remaining butter. Combine it in a mixing bowl with powdered sugar, cocoa and vanilla. Add 1-2 tablespoons water for a frosting consistency.

Mix yellow cake mix according
to package directions.
Then mix together:
6 ounces evaporated milk
3/4 cup sugar
3/4 stick butter
2 egg yolks
vanilla
1/2 package coconut (1 1/3 cups)
3/4 cup chopped pecans

Cook on stove on medium for 12 minutes. Remove from heat. Allow to cool. Add to cake batter.

1 box triple chocolate cake mix
1 small package semi-sweet
chocolate chips

Make cake using package directions. Add a small bag of chocolate chips to the batter. Pour batter into a greased tube pan. Bake until toothpick inserted comes out clean.
