Enjoying good food is a pleasure shared by families everywhere. Included are some of my favorite recipes: Autumn Meat Loaf, Mom's Corn Pudding, Old-Fashioned Apple Cake and delicious Corn Light Bread.

Autumn Meatloaf
2 pounds ground round meat
1 1/2 cups dry bread crumbs
1/4 cup catsup
1/2 cup warm water
1 envelope onion soup mix
2 eggs, slightly beaten
2 slices bacon (optional)
1 8-ounce can tomato sauce
Salt and pepper to taste
Mix ground round, bread crumbs, catsup, warm water, soup mix and eggs in bowl. Add salt and pepper if desired. Shape into loaf in loaf pan or casserole. Top with bacon, Drizzle with tomato sauce. Bake at 350 degrees for 1 hour or until cooked through.
Serves 6 to 8. Freezes well.
Mom's Corn Pudding
1 17-ounce can cream-style corn
1/2 cup milk
1/2 cup cracker crumbs
1/4 cup melted butter
1/4 cup sugar
1 egg, beaten
Paprika to taste
Mix corn, milk, cracker crumbs, butter, sugar and egg in bowl. Pour into prepared casserole dish sprayed with cooking spray. Bake at 350 degrees for 45 to 55 minutes or until brown. Sprinkle with paprika. A little cheese on top is nice for a change.
Serves 4.
Old-Fashioned Apple Cake
3 medium apples, peeled and chopped
1 cup sugar
1 egg, beaten
1 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
4 tablespoons wheat germ
Place apples in medium bowl. Sprinkle with sugar. Let stand for 30 minutes. Mix in egg.
Mix the following in a small bowl: flour, baking soda, cinnamon and 3 tablespoons wheat germ. Add to apple mixture and mix well.
Pour into 8x8-inch pan sprayed with cooking spray. Sprinkle with remaining 1 tablespoon wheat germ. Bake at 350 degrees for 25 to 30 minutes. Serve warm.
Serves 9. Great with whipped topping.
Corn Light Bread
1 1/2 cups buttermilk
4 tablespoons oil
1/3 cup sugar
2/3 cups self-rising flour
1 1/2 cups self-rising corn meal
Mix buttermilk, oil and sugar together thoroughly. Add flour and meal.
Mix and let stand for five minutes. Beat down and pour into greased bread pan. (I use an 8-inch iron skillet, but any bread pan will do.) Bake 45 to 50 minutes until brown.
Makes 1 loaf. This loaf is so tasty. A pat of butter on top tastes great.
